lamb dishes. The dish 'Panseared fillet of beef with a spring
vegetable medley, lyonnaise potatoes and red wine
jus'was praised
by assessors for the perfectly cooked and trimmed, lean and
tender beef, lovely marriage of flavours and excellent
presentation. Colour and texture contrasts were
outstanding. This was a superbly constructed entry,
showcasing exemplary dish components, professional
technique and meticulous
presentation."

Lamb shank, with feta and mint salsa, smashed minted peas,
baby gourmet potatoes, and wine jus was highly praised by
assessors for the trimmed, lean and flavoursome lamb,
perfectly cooked and meltingly tender. This dish was
beautifully presented and very well considered, with
outstanding flavour pathways. A superb dish and a
credit to the kitchen.
